First, soak your seeds in a Vinegar and water solution, for 15 minutes to kill any harmful bacteria. Rinse well and soak the seeds in plain water overnight. The next morning, drain the seeds and place them in a mason jar. There are mesh lids made just for sprouting, or you can just replace the center part of the mason jar lid with cheesecloth or loosely woven muslin to allow air to circulate and excess water to drain. On the last day, place them in in a bright area, (not direct sun), being very careful not to let them dry out. To do this, we recommend placing Milkweed seed in a damp paper towel or damp sand in a zip lock bag and place in your fridge for 3 – 6 weeks (30 days). We taped ours to the bottom of a refrigerator shelf.Growing IndoorsPlanting In Spring: Once the 30 days are complete, it’s time to plant the cold stratified Milkweed (asclepias) seeds. We recommend planting in 2-4” peat pots. Fill peat pots ¾ of the way with seed starting potting soil and gently add water. Water should be able to drain through the peat pots. Once the soil is damp, place 1-2 cold stratified seeds into each pot. To finish, place 1/4 inch of soil on top of the seed.Planting In Fall: If you’re planting Milkweed seed in the fall, let nature do the cold stratification for you! There is no need to place your seeds in the refrigerator before planting, you can plant seeds directly into the soil after there have been a few frosts in your area. This allows for the seeds to remain dormant for the winter and come up in the early spring. Clear away any existing growth and using your index finger to measure, create 1.5″ holes for each Milkweed seed. We recommend spacing seeds about 4-6” apart. Place a seed in each hole and cover. Use a flat pan under the peat pots and add a half inch of water to the bottom of the tray. Don’t over water as it can cause fungus. In our experiment, this happened to us. Ideally a sturdier stem is better. Cold stratified seeds should germinate and sprout within 10-15 days once planted. In total Milkweed from the day they are cold stratified to growth can take 40 plus days, so be patient!Other planting options: Place dry seed (not stratified) in seed starting soil and plant in peat pots under a grow light or in a greenhouse to germinate seeds. The success rate for this is low and more difficult to accomplish. If you choose to use this option it can take months for the seeds to germinate.If you are planting seed outside, we suggest seeding in late fall, and let the Milkweed seed lay on the ground through winter. It even beats the Almighty Kale in terms of nutrient density according to the USDA. The peppery taste and unique leaf structure make it a chef favorite, used in soups, salads, and garnishes. For the home cook, cress is great for juicing, smoothies, or as an addition to a salad mix to add some extra spice. Unlike many greens, cress seeds are mucilaginous. This means that they’ll take in water and form a mucus membrane around their hulls, so they don’t need as much water when germinating as other seeds. Spray them very lightly, and make sure your soil mixture isn’t too moist. You’ll have low germination rates if you use too much water. After 3-4 days, your cress seeds will be sprouted and will be ready for some light. Make sure you continue to water, but do not overwater your cress. You’ll get mold and potentially drown out the fragile root systems, leading to either rot or just a poor yield! For cress, you’ll want to harvest around the 8-12 day mark. Make sure your greens are as dry as possible when harvesting as any moisture on them when storing is conducive to mold and rot. Consider growing your own microgreens at home as this will allow you to decide exactly when you harvest your crop.Another way to boost the nutritional value of recipes made with microgreens is to use extra-virgin olive oil or another healthy oil. The presence of oil helps improve the bioavailability of the fat-soluble nutrients in microgreens (carotenoids, vitamin E, and vitamin K). Some people use glass jars to grow their sprouts. If you already have a glass jar and don’t plan on growing a bunch of sprouts at once, you can use this technique and just get a plastic lid that is designed to fit on wide-mouthed glass jars – specifically for growing sprouts. A mason Jar also works. Between “sprouting sessions” you will need to clean and sanitize your sprouting jar. Be careful not to leave any soap or residue in the jar, as this can inhibit the growth of your next batch of sprouts. First, soak your seeds in a Vinegar and water solution, for 15 minutes to kill any harmful bacteria. Rinse well and soak the seeds in plain water overnight. The next morning, drain the seeds and place them in a mason jar. There are mesh lids made just for sprouting, or you can just replace the center part of the mason jar lid with cheesecloth or loosely woven muslin to allow air to circulate and excess water to drain. One to Twice daily, rinse and drain the seeds, placing your jar upside down within a bowl or tray to catch drainage. Within about 5 days, you can expect plump and flavorful sprouts. On the last day, place them in in a bright area, (not direct sun), being very careful not to let them dry out.
